Physical properties of agricultural crops and food products and their relationship to harvesting, storage, and processing. Physical properties covered include: density, shape, moisture content, water potential, water activity, friction and flow or particulate solids, terminal velocity, thermal properties, interaction with electromagnetic radiation, and viscoelastic behavior of solids. Typically offered Fall.
